  • Thank you for swinging by captured in His image Photography! My name is Laura and I am the girl behind the camera. I am a new bride to my best friend since high school, Jordan. We live in Manhattan, Kansas where I work for my alma mater, Kansas State University. I love mac n' cheese, cartoons, traveling, Aldi brownie mix (it's the best!), theater, Disney, enjoying a glass of wine with good friends, thrift shopping, Jesus....and anything else that brings adventure into our everyday life!

    captured in His image Photography is at the center of my heart. This journey began two years ago and has been the most challenging i've ever faced. I am humbled with each stumbling block and encouraged with each 'ah-ha!'. Being invited in to life's most intimate moments by people who start as strangers and quickly become friends has to be the most amazing experience ever. I believe that all of us are on a unique journey and that photos are a truly beautiful way to capture God's presence, purpose and blessings in our lives.

Addictive Snack Mix & A Simple Dinner

Although I really love working on a college campus, now that J is a student again i’m finding that our eating habits are quickly slipping into our old college ways. Meals are rushed and sometimes later than we’d like, pre-packaged snacks are a must throughout our day and the pizza shuttle coupons clipped to our fridge tempt us on a weekly basis (and sometimes we give in….;)). It might sound silly, but Pinterest has been a great tool in helping us combat these ‘old college habits’. It’s been fun to write our weekly grocery list around the ingredients needed for the recipes we carefully select each week. This week’s big successes include a fun snack mix (recipe passed along by J’s momma) and a healthy and simple Tilapia dinner.  If you’ve got an inner college kid who only wants to eat pizza, chips and brownies…. I hope these recipes help keep their cravings at bay:-D

Seasoned Goldfish-Pretzel-Peanut Mix

Ingredients

  • 3 packs of goldfish (I use less goldfish and supplement with pretzels and peanuts)
  • 1 envelope ranch dressing mix
  • 3 tsp. dill weed
  • 1/2 tsp. garlic powder
  • 1/2 tsp. lemon pepper
  • 1/4 tsp. cayenne pepper
  • 2/3 cup vegetable oil ( I only use about 1/3)
Directions
1. Combine oil & seasonings in a bowl.
2. Mix your goldfish, pretzels and peanuts in a large bowl. Begin to drizzle the seasoning mixture throughout.
3. As your pour the seasoning onto the mix, stir the crackers with your hands to ensure that the seasoning is spreading evenly. (I hate getting my hands messy but this definitely is the best way to make sure the flavoring doesn’t pool in the bowl!)
4. Spread the mix evenly on a cookie sheet and back for 15-20 minutes at 250 degrees.

5.  Let cool and enjoy! If you keep this snack mix in an air-tight container it will hold for over a week:)

Baked Tilapia

This was my favorite Pinterest recipe try of the week. If you’d like to follow my boards, please click here!

Ingredients

  • 3/4 cup soft bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • 4 Tilapia fillets

Directions

  • In a shallow bowl, combine the bread crumbs, cheese, garlic salt and oregano. Coat fillets in crumb mixture. Place on a baking sheet coated with cooking spray.
  • Bake at 425° for 8-12 minutes or until fish flakes easily with a fork.

Nutritional Facts: 1 fillet equals 143 calories, 2 g fat (1 g saturated fat), 72 mg cholesterol, 356 mg sodium, 2 g carbohydrate, trace fiber, 28 g protein.

J and I paired french cut green beans, sliced cuties and a surprisingly yummy olive oil and garlic couscous (a $1 special at Aldi last week!) with this light and healthy fish. J would’ve liked the fish to have a bit more flavor (I told him sauces and seasonings= calories and were a no). We got some Wham seasoning for Christmas and it’s great on all meats and even eggs. One sprinkle of Wham and his ‘inner college craver’ was doing a lot better:)I, however, liked the light taste of the meal and appreciated the low calories without any additional seasoning. This will definitely be a meal we make again!

These were taken at Tuttle Creek State Park in Manhattan, Kansas last weekend when Jordan and I were showing a couple of new international students around town. I don’t make it out to this spot often enough but when I do it never ceases to take my breath away.

Sarah’s Winter 2012 Headshots

Saturday phone calls from my sister are great. Saturday phone calls that result in her hopping in the car to come visit? Those are the BEST. Sarah is in a musical theater conservatory program in St. Louis and graduation is just around the corner. Before she walks across the stage to receive her diploma, she’ll hit the stage in New York City for her showcase. Big stuff.

During her visit to Manhattan we were graced with exceptionally warm weather (the happy trend lately!). It only made sense to venture out for a session to update her headshots in preparation for her upcoming auditions and showcase. We kept it simple, stopping at an empty field in our neighborhood and the K-State Alumni Center and swapping tops here and there. I think that her infectious smile and sparkly eyes will be enough for anyone she performs for to become completely captivated. Although, I may or may not be a bit biased….;)Check out her photos to see for yourself!

J came along (he’s learning to use a camera, woo!) and got some neat ‘behind the scene’ shots. Thanks, J!

Lexi & Bryan’s Engagement Session, January 2012

During the fall of 2007 I moved into my residence hall room at K-State to begin my sophomore year. One the same day (and just next door!), Lexi and her roommates were also moving in. We met and became fast friends, enjoying lots of Manhattan adventures and late movie nights throughout the year. Over the past couple of years we  kept in touch and met for Pizza Shuttle dates when were both in Manhattan. I loved hearing about school and life and knew she had a different sparkle in her eye when we met-up and she told me all about Bryan!  She and Bryan met through a mutual friend and fell for each other quickly despite the fact that Lexi was living here in Kansas and Bryan in Florida. While still in school, they overcame the trials a long distance relationship brings and fell completely in love with one another.

Last August at the end of one of Bryan’s Kansas visits, he asked Lexi to marry him- right in the middle of Kansas City International Airport! As of a couple of weeks ago Bryan is officially a Kansas resident and he and Lexi are enjoying the time leading up to their August 4th wedding that will be held in Anna Maria Island, Florida (can you say BEAUTIFUL?) This weekend we had the chance to spend some time together for their engagement session. It was evident right away that these two are incredibly comfortable with one another and SO happy just to be together! Their laughter was infectious and I could not get enough of Bryan’s ‘spit smile’ (don’t ask) that had Lexi and I both doubled over throughout the session. OH, and if the afternoon couldn’t get any better, we ended their session at Varsity Donuts in Aggieville. The staff was wonderful and let us take photos around the restaurant. Of course, we also enjoyed their delicious donuts:)
